4 lamb steaks
1 tbsp plain flour
2 tbsp oil
1 onion sliced
grated rind and juice of 1 lemon
2 tbsp of chopped mint
1 tbsp of demerara suger
1/2 pint chicken stock
1 sprig of mint to garnish

Heat oven to 180 degrees

Toss lamb in flour and then heat the oil and fry (seal) the lamb until browned then transfer to casserole dish.

Add onion to the pan and fry until soft but not brown. Stir in lemon, mint, sugar and stock and season taste. Bring to the boil then pour over lamb. Place in the oven for 1 1/2 hours....

Serve with potatoes or what ever you fancy - every time the lamb with come our falling apart delicious - i find if you leave the top of the lamb out of the sauce you get a nice crispy bit to enjoy :hungry
