What else can you do with it apart from putting it on salads?
Cause I especially love beet cooked with Juniper & Blackpepper and frequenly snack on mini beets cooked this way :D

Beetroot is rich in magnesium and iron , it's full of antioxidants, has no fat at all, very few calories and is a excellent source of fibre.
Buy a fresh raw beet with skin, then bake it in the oven like a potato.
When you put it in the oven to bake the smell is full of eat me hues and unbelievably good. NB: Don,t peel the beet bake it in its skin
After cookinng for approx 45 mins remove from oven, let cool slightly and slit open and eat it with a spoon like a potato.or Raita style yogurt based sauces compliment the baked beet beautifully. Yum Yum :!:
Alternatively you can blend together a raw medium sized beetroot, a couple of sweet apples and two carrots to create a juice drink full of vitamins and antioxidants.
Chill in the fridge, it can make a perfect start to the day or be a great pick-you-up during a long day at work 8-)
